I think the problem with that would be you'd have one texture across all the surfaces and it would just end up looking a mess. A sea of leather with no real shape to it. I've seen some vinyl wraps around interior sections normally covered in tweed/suede that were alright if you're going for that look (to me vinyl says "F150 bench seat" rather than "sports car"). Actually I think the red one is leather but I'm pretty sure the first one is vinyl anyway, I'm not a fabrictritionist. As to my own tastes, I really like the stock interior with the leather and suede, even compared to more modern cars it's a very nice place to sit. If I was going to redo my interior it would probably be something more like the suede/alcantara look you find in modern Ferraris and such. Probably wouldn't do the carbon bits though.
